Okay. So that may not be the most accurate title. Here is what I made. You be the judge.
It was inspired by Jalapeno Lime Shrimp that I tried a few months back at Applebee's. And it was surprisingly simple.
- yellow rice
- shrimp (about 30 med to large)
- 1 lime
- 1 can of black beams
- 1 can corn
- 1 cup fresh diced tomatoes
- 1/2 of a med. onion diced
- 2 to 2 1/2 cups diced zucchini
- fresh diced jalapeno
- olive oil
- chipotle seasoning
Start the rice since it will take about 30 minutes. While the water is starting to boil, dice the zucchini, onion and tomato. As soon as the zucchini is diced toss it into a skillet with about 2 tablespoons of olive oil and chipotle seasoning (to taste, I used about 1/2 tablespoon). After 2-3 minutes add the shrimp, a few tablespoons of water and more chipotle seasoning. Cover.
While keeping an eye on the skillet, rinse the canned corn and beans in a colander, then put them in a dish with a teaspoon of cilantro and a coating of olive oil. Stir and microwave for two minutes. Then add the tomatoes and onion. Stir the skillet again! Squeeze the juice from half of the lime into the bowl and scrape some of the pulp in as well. Stir and microwave for one more minute.
When the shrimp and zucchini are almost done, add a tiny bit of diced jalapeno, and stir.
Stack the plate with layers. Yellow rice first, shrimp, veggie salsa. Garnish with lime and jalapeno if desired.
